Preparation of the Old Dutch Speculaas
Koopmans' baking mix can be used to make either Speculaasbrokken (crunchy cookies) or gevulde Speculaas (filled speculaitus cake).
You will need:
for gevulde Speculaas
-1 package of Koopmans Speculaas
-150 g butter or margarine
-1 package Amandelspijs (e.g. from Dr. Oetker)
-1 egg size M
-4 tablespoons water
-55 g almonds or almond slivers for garnish
-All ingredients at room temperature

Kitchen utensils:
-Square springform pan approx. 18 x 18 cm or springform pan 24 cm
-Mixer with dough hook
Preparation time: approx. 20 minutes
Baking time: about 40 minutes
Oven temperature:
Top/bottom heat: 170 degrees
hot air: 150 degrees
Gas: Booth 3

Preparation:
1.Place the baking rack under the center in the oven and preheat it.
Preparation of the dough and almond filling:
1.Stir the butter until soft and add the baking mix and 2 tablespoons of water.
2.Knead it well with a mixer with dough hook or your hands to form a dough and then store it in the refrigerator.
3.Mix the amandelspijs with half of the egg and 2 tablespoons of water.
4.Grease the baking dish.
5.Take the dough from the refrigerator and knead it again briefly and divide it into 3 parts.
Preparation of the filled speculaas:
1.Cover the bottom and the edge with a height of about 2 cm with 2 parts of the dough.
2.Spread the amandelspijs with the back of a wet tablespoon on the bottom of the baking dish covered with dough.
3.Roll out the 3rd part of the dough so that it is as large as the surface of the baking dish and place it on top of the amandelspijs.
4.Brush the dough with a beaten egg, decorate the whole thing with almonds or almond slivers as you like and then brush it again with egg.
Bake
1.Bake the filled speculoos in the lower part of the oven for about 40 minutes.
Furthermore, you can also make Speculaasbrokken with the baking mixture itself. For this you will need:

-175 g butter
-1 egg size M
-55 g almonds or almond slivers for garnish
